Pu'er (or Pu-Erh) are teas in which leaves are rehydrated after fermentation to allow a second fermentation — post-fermented teas. After production, these teas are stored in cool cellars or buried in the ground for one or more years. Ranging from dark to light brown in colour, Sinensis leaf has a robust, spicy and rustic flavour, and depending on how long it is brewed, it has an earthy and woody flavour. The infusion has a dark red colour.
